At the table, top sommelier Andy De Brouwer will guide you through the unique universe of Palmer & Co, the sparkling star of the evening. And not through the usual bottles, but through a sublime selection of large formats and exceptional vintages from the renowned Champagne house. An extraordinary tasting in an equally extraordinary setting, in one of the most elegant and atmospheric salons in the historic heart of the capital.

PALMER & CO: CHAMPAGNE WITH PATIENCE

Based in Reims, Palmer & Co is one of Champagne’s most distinguished houses. Founded in 1947 by a group of winegrowers, the House has built its reputation on an unwavering dedication to terroir, extended ageing and the art of blending.

Palmer & Co is particularly renowned for its Vintage Collection, the crown jewel of this prestigious Champagne House. Produced in extremely limited quantities, the collection showcases champagnes from exceptional vintages, patiently matured for many years in Palmer & Co’s historic chalk cellars beneath the heart of Reims.

Palmer & Co also has a special reputation for its large formats, up to and including the monumental 15-litre Nebuchadnezzar. Extraordinary formats belong at extraordinary occasions. THE PEOPLE BEHIND THE EVENING

Glen Ramaekers is a Belgian-Filipino chef and sommelier whose versatile culinary style brings together European gastronomy and his Filipino roots. After honing his craft alongside leading chefs and running restaurants of his own, he now focuses primarily on consultancy, collaborating with premium brands such as Palmer & Co.

For Olivier Van Heymbeeck, this evening feels very much at home. As chef of the Cercle Royal Gaulois, he knows this magnificent setting inside out. Olivier honed his craft in some of Brussels’ finest hotels and in high-end catering, developing a style centred on seasonal produce, refined simplicity and a distinctly personal touch.

For this special evening, he joins forces with Glen to create an exciting five-course menu. With pride and passion, Olivier welcomes you tonight as your gastronomic host.

His surname may suggest otherwise, but Andy De Brouwer’s world is wine. A renowned sommelier and respected wine expert, he was named Sommelier of the Year in 2012 and First Maître d’Hôtel of Belgium in 2019.

Tonight, Andy will share his expertise and passion as he guides you through a remarkable selection of Palmer & Co Champagnes.
