This limited release Shiraz is selected from Anvers best parcels of the vintage. The 2021 vintage combines the vibrant berry and spice flavors of Adelaide Hills Shiraz with the richness, dark plum and blackberry fruit of Langhorne Creek Shiraz. After 20 months maturation in French oak barrels this Shiraz is a wonderfully complex combination of elegance and power, rich yet with velvety tannins and a long persistent finish. Only 3000 bottles of this exclusive, hand crafted wine were produced .The grapes are manually harvested and de-stemmed into small, open concrete fermenters and fermented to dryness on skins with regular gentle pump-overs to extract colour and tannin. By de-stemming the grapes only, without putting through the crushing rollers a number of whole berries remain in the ferment which helps lift the fruit character. Following fermentation the grapes are pressed, settled and racked to a combination of new and 1 year old French oak barrels for malolactic fermentation. Following malolactic fermentation the wines are racked and put back to the same oak barrels on light lees. Only very fine grain French oak barrels are used with medium toast levels. After 12 months oak maturation a selection of the best barrels is made for the Tomorrowland Shiraz. The wine is then blended and returned to the oak barrels for a further 8 months to allow the components to fully integrate.

Bedenk vooraf altijd voor welke gelegenheid je de wijn wilt gebruiken. Als aperitief wordt meestal gekozen voor lichte witte wijn,  rosé of bubbels. Aperitief komt van het Latijnse ‘aperire’, wat openen betekent: met het aperitief open je niet alleen de maaltijd, het is ook de bedoeling om papillen en de honger aan te scherpen. Een te zoete wijn is hier dus niet op zijn plaats, omdat die je smaakzin kan beïnvloeden. Veel Vlamingen opteren nog voor porto of Pineau de Charentes, maar die zoete zonde bewaar je best voor na de maaltijd. Vlees gaat meestal erg goed samen met een rode wijn, gevogelte en vis gaan het beste samen met een glaasje wit of rosé. Kaas, desserts en pasta vragen geen specifieke wijn, en hier kan je dus afgaan op de smaken die jij het lekkerst vindt. Al is het wel zo dat er een aantal onweerstaanbare combinaties bestaan! En al twist men niet over smaak en kleur: vraag raad op maat aan uw adviseur!
