Acta Non Verba Shiraz 2021

This limited release Shiraz is selected from Anvers best parcels of the vintage. The 2021 vintage combines the vibrant berry and spice flavors of Adelaide Hills Shiraz with the richness, dark plum and blackberry fruit of Langhorne Creek Shiraz. After 20 months maturation in French oak barrels this Shiraz is a wonderfully complex combination of elegance and power, rich yet with velvety tannins and a long persistent finish. Only 3000 bottles of this exclusive, hand crafted wine were produced .The grapes are manually harvested and de-stemmed into small, open concrete fermenters and fermented to dryness on skins with regular gentle pump-overs to extract colour and tannin. By de-stemming the grapes only, without putting through the crushing rollers a number of whole berries remain in the ferment which helps lift the fruit character. Following fermentation the grapes are pressed, settled and racked to a combination of new and 1 year old French oak barrels for malolactic fermentation. Following malolactic fermentation the wines are racked and put back to the same oak barrels on light lees. Only very fine grain French oak barrels are used with medium toast levels. After 12 months oak maturation a selection of the best barrels is made for the Tomorrowland Shiraz. The wine is then blended and returned to the oak barrels for a further 8 months to allow the components to fully integrate.

Om een wijn optimaal te appreciëren, zijn er enkele spelregels bij het degusteren. Uiteraard mag je gewoon naar binnen gieten, maar met behulp van de juiste techniek kan je nog meer genieten. Heel veel mensen zijn te voorzichtig bij het proeven. Neem gerust een flinke slok en laat de wijn gedurende een paar seconden als een tintelende tsunami over je tong gaan en durf enthousiast te kauwen. Ook het ‘slurpen’ van lucht om de wijn te ‘reanimeren’, maakt deel uit van het ritueel van het degusteren. Door tijd en aandacht te besteden aan de proeffase, zal je in je mond en op je tong uiteenlopende sensaties ervaren, waarbij de molligheid, de tannines en de zuren zich op een ander moment en een andere plaats manifesteren. Na het impregneren van je tong en de smaakklieren kun je de wijn doorslikken, hoewel professionele proevers er de voorkeur aan geven om de spuugbak te gebruiken. Een goede wijn kun je herkennen aan een fantastische finale, met zinderende zuren die zorgen voor een lange nasmaak op de tong. Een matige wijn heeft een vlakkere nasmaak die sneller zal wegebben.
