De druiven worden later geplukt dan normaal, maar vroeger dan wanneer ze dessertwijn als bestemming hebben. Dit geeft deze wijn zijn typische rijpe botrytisneus, waarbij die zoete impressies echter niet vertaald worden in een soortgelijke smaak. Een lange vatrijping, in de stijl van Jerez, geeft de wijn een oxidatief karakter.
